The Lady Percy

This delightfully refreshing spin on the classic White Lady adds sage and is a signature drink at Percy & Founders. As far as I know it’s the original version—those creative peeps at P&F have been riffing on it since. A definite must have.


Ingredients

  • 25ml egg white

  • 50ml gin

  • 25ml freshly squeezed lime juice

  • 15ml simple syrup

  • a handful of sage leaves


Method

  1. Reserve 1 sage leaf as a garnish. Bruise the rest with a muddler.

  2. Dry shake the egg white.

  3. Add the bruised sage leaves, gin, syrup, lime juice and ice. Shake for 15 seconds.

  4. Strain into a chilled sour glass.

  5. Decorate with that last sage leaf.
